Speak is sprechen, but when you say "I speak," it becomes spreche. That's a conjugation. It happens in English too, but there's less conjugations. You can see here that the "to" from the infinitive form is taken out and that the he/she/it conjugation has an s at the end.
to speak (infinitive form):
I speak You speak He/she/it speaks We speak They speak |
