Ingredients
oil for frying 1 cup all-purpose flour 2 teaspoons baking powder 1 egg 1 cup minced clams ground black pepper to taste
Directions
Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C). Whisk the flour and baking powder together in a bowl; set aside. Beat the egg in a separate bowl until smooth. Stir in the minced clams and black pepper to taste. Stir in the flour to form a batter. Drop the fritters into the hot oil by the heaping tablespoonful. Fry until golden on both sides, about 1 minute per side. Drain on a paper towel-lined plate to serve.
Footnotes
Editor's Note We have determined the nutritional value of oil for frying based on a retention value of 10% after cooking. The exact amount will vary depending on cooking time and temperature, ingredient density, and the specific type of oil used. |

I tried this recipe based on my friend Monork's recommendation and it was GREAT!
Regrading the oil, personally, I use olive oil. It gives it that Tuscan taste to die for. But any are good. My friends all use canola and it's still delish. |

| By the way, Monork honey have you tried the grilled clam recipe that Red Lobster released recently? I just went down to the market to get some fresh clam, I'll be having it all week. A friend of mine thinks it's the ambrosia of the gods. You really ought to have some. |

@Catmando
Wow, I'll have to try that out some time. I'm gonna need some more clams myself. Only one of my 6 refrigerators is full of them. |

Here's the recipe I got for the grilled clams:
3 lbs hard shelled clams, cleaned and scrubbed (the smaller the more tender they will be) 1 tablespoon extra pure olive oil 3 large garlic cloves, minced, extra if you want 1/2 cup dry Pinot Grigio 1 tablespoon unsalted butter salt and pepper, to taste
Cook ten minutes. Afterwards, add chopped fresh parsley, and if you want, a lemon wedge or some horseradish. It's not very good with horseradish but the lemon wedge tang is a great flavor addition.
Also, use sea salt. Preferably European sea salt. |

| I find that covering it in Old Bay and marinating it in watered down cocktail sauce for about 20 minutes can really add some tang after you squeeze some limes on it. |
