| Will legs or arms break if you try to put them in a different position without welds? |

You mean like this:
game.Workspace.Character["Right Arm"].Position = Vector3.new(0,0,0)?
Yes, that would render the arm useless, and it would most likely fall into the void.

What if you do something like
game.Workspace.Character["Right Arm"].CFrame = game.Workspace.Character["Right Arm"].CFrame * CFrame.Angles(0,180,0)
Will that break? |

You mean moving as in walking? Or something like;
game.Workspace.omzig["Right Arm"].Postition = Vector3.new(1, 33, 7) ?
If you did the first one, it would most likely break. I think I tested it a long time ago.
The second one would probably send your arm falling down forever, unless you made CanCollide True. |

Why would you like to get rid of the welds?
If it's because you'd prefer a smoothe surface, just make a shirt that's completely transparent and all of the surfaces will be smoothe. |

| Arms have special welds, called motor6d. They are something like not fixed welds, and those can break, when you just move arm away. You can still use original welds properties with it, but i would not advise doing so. Use motor6d to rotate/fixate character arms, not to move it. |

| Probably because original welds stop arm from doing so? But its always easier to use fake arms. |

| Eh, not always. Because many ArmWeld scripts do that, and then the arms break, and whatnot. It can get annoying. |
