The color change may not be visible because the VertexColor property changes the hue of a texture.
It's really only visible with darker colors, depending on what color the texture originally was.

As you can see from the video, color changes that are from really light colors are not as visible as changes from colors that stand out more.
Changing hue is the easiest way to change hair "color", but it doesn't work for every color depending on the original color of the hair.
The only way to change the actual color is to make your own hair texture and change the color using an image editing software and then reupload it to ROBLOX.

export the texture of the hair out and make it grayscale with higher brightness then vertex color should actually make changes |

either that or change the hue value of the image to the color u prefer changing hue will move the colors around but any black-grey-white colors are left alone, very helpful in things like re-coloring |
