You can create a script that saves everything anyone said, and replays it in the output for the game dev.

You can do this already. Just use Scripth's admin or Kohl's Epix, both of which can save chatlogs and command logs even after a server shutdown. You can view logs with virtually any admin out there, but if you want to get a comprehensive picture of how your visitors are behaving, I'd recommend one which autosaves. After all, the old saying goes: "When the cat's away, the mice will play."
