As the earth is spinning, and you see the sun near the horizon, it will create the illusion that the sun is going down, when, actually, IT'S STAYING IN THE SAME FKING SPOT |

the reason why the sunuset is a different colour is because less light is shown when during a sunset, which if you experiment with a lightbulb same color as the sun it would have the same effect.
The less light makes the sun's illusion of changing a different color. |

Okay, so let me clarify a couple things.
The reason we wouldn't notice if the sun disappeared for about 8 minutes is because we are approximately 8 light minutes away from the sun. Gravity can't travel faster than light can, so imagine if you will a ripple through our solar system once the sun disappears. In about 8 minutes the ripple will reach us at which point we will lose the light from the sun and fling off into space.
As for why the sunset is a different color, well the answer actually ties into why the sky is blue. I'll be simple with the explanation. So when a photon (light) hits a particle an electron jumps an energy level and releases a photon of different energy (a different color). The sky is blue during the day because blue is actually the most common color that will show up with the sky at the angle that it is at. Photons with the "blue" energy level are what our eyes pick up. When the sun sets (when the earth spins to another angle) the colors that are projected from the atmospheric particles change. This is why sunsets give you yellows, golds, and oranges. This also explains why if it is smoky out you may see the sky or sunset as being a little more red than usual.

Because when the sun rotates around the earth, we will sometimes be unable to see the whole sun, and the rays of sun bounce off thins making the different colours. I explained it with bad science. |
