So I have a cylinder+sphere that are supposed to be anchored but the player can go through them.

Anchored means it stays in place.
CanCollide is the property you want to use. If CanCollide is off, people can walk through it.
( Also, you can't really walk on meshes. You walk on the brick that it's in. (It's still rectangular.)) |

And you can't cancolide the entire mesh?

No, you can only walk on the brick that the mesh is inside. You aren't walking on the actual mesh.
The only shapes that let you walk around it smoothly are wedges and spheres. Anything else will just be a square/rectangle. |
