I'm posting on a group wall but my post seems to vanish at some point, but nothing's coming up on audit log. Could you delete someone's wall posts without it appearing on audit log

No, there's not. The only way your posts would be deleted without appearing on the Audit Log is if they were inappropriate and were removed by a Moderator.
