Are you talking about the offsets? They are used to move the center of a generated map. So you could generate an island in one corner and another in the other corner of your game instead of having it centered to the game.
If you're talking about the X and Z in size that is the length and width of the generated map. |

Use a small size like say 250, for the island. Then move the offsets both to one side. Set amplitude(Height) to desired level. Set frequency(Amount of bumps/peaks) to 1 or 2. And set water about 1/3rd of the amplitude. Press generate. Then generate another map over that one but move the offsets to the other side. This will creat a second isle in the opposite corner. You can move the offsets to opposite sides and it will fill in the other corners.
You can generate over existing terrain as many times as you like. |

| You can make as many islands as you want just change the offsets. Play around with generator, you can always use the redo key if you don't like something, or the clear button in generator to remove all the voxels. |
