Sci fi, modern or fantasy?
Assuming it's fantasy (which it probably is): Start with a few basic classes which players are allowed to pick from such as warrior, thief or mage. When they get to a certain stage they can evolve their class in one of a few ways that can affect how you play.
For example, a thief could either evolve into a ranger, which is proficient with ranged attacks or an assassin which involves getting as close as possible to an enemy. 2 completely different paths to choose from.
